Grading
Grade A (Premium)
Size: 25–40 grams per bulb
Quality: Large, firm bulbs with smooth, papery skin, free from blemishes, sprouting, or discoloration. The shallots have a bright, uniform color (purple or golden), and are fully mature with a strong, fresh aroma.
Grade B (Standard)
Size: 15–25 grams per bulb
Quality: Medium-sized bulbs with slight blemishes or minor skin imperfections but still firm and intact. The color is generally uniform, though some bulbs may show slight fading.
Grade C (Lower)
Size: <15 grams per bulb
Quality: Small, soft bulbs with visible blemishes, sprouting, or discoloration. The skin may be damaged or cracked, and the aroma may be less pronounced or slightly off.
